Ingredients
- 1 large spaghetti squash (about 3 lbs)
- 1-2 pounds mild or sweet Italian sausage
- 1 yellow onion, diced
- 1 bell pepper, chopped
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- 4 eggs, whisked
- (optional: add anything you like with pizza: more veggies, fresh basil, even cheese if you do primal)
Instructions
- Preheat oven to 400 degrees.
- Cut spaghetti squash in half lengthwise. Place spaghetti squash cut side down on a baking sheet and bake for 20-25 minutes until you can shred the squash. Then reduce oven to 350 degrees.
- While squash is cooking, place a large pan over medium heat. Add sausage, pepper and onion. Brown the sausage, breaking up until pink no longer remains.
- Add sauce and Italian seasoning to the pan and mix well.
- Once squash is done cooking, remove threads with a fork and place in an 9 x 13 baking dish.
- Add sausage mixture to the 9x13 dish and mix well with spaghetti squash threads.
- Lastly, add whisked eggs to the baking dish and mix everything together until you can no longer see the eggs.
- Bake at 350 for 1 hour or until set.
- Let rest for 5 minutes. Serve!
This recipe is super versatile. You can use any meat, sauce, etc to change up the flavors. Add some chopped spinach or mushrooms to up the veggie intake. Get creative!
